Vegan and Vegetarian Cooking Classes

It has been a crazy month and it’s hard to believe were almost into September. I have been busy getting my September cooking class schedule up on the calendar and have been doing a lot of research on introducing a new Vegan cooking class to my repertoire. I will be offering a open group Vegan class on Friday, September 14, 2018.

I have not had the opportunity to get on my web page over the past month, since my husband has been dealing with some health issues. He was diagnosed with diabetes and kidney disease. When I heard that my stomach twisted up in knots. However, I immediately got on the internet and began researching everything I could about diabetes and kidney disease. Everything pointed to getting him on a plant based diet.
Our family has always eaten meat so this is going to be a new venture for me. My older brother was a Vegan and all I remember him eating were sprouts and nuts. I’m sure there was more to his diet however, back then there wasn’t the knowledge or variety of foods available as there are today.

I am enjoying preparing vegan and vegetarian options and my husband who has been a committed carnivore is really enjoying the meals. Who knew that you could mix cauliflower rice, quinoa, soak ground flax seeds in water and use it as binder to these make meatless meatballs. Understanding flavor profiles and spices is the key to cooking any cuisine.  There are endless spices and ingredients available that enhance vegetarian and vegan recipes. We are joyously embracing this new way of eating together.

I will continue to give cooking classes in all cuisines ranging from 30 minute meals, vegetarian, Korean, Thai, Italian and many more world cuisines. Here is a picture of the cauliflower, quinoa meatless meatballs with a tasty coconut sauce I prepared for my husband. It is delicious, nutritious and diabetic and kidney friendly!
