Chicken Lettuce Wrap Recipe

Serves 4-6

  • 2-3 Boneless Chicken Breast Diced
  • S&P to taste
  • 1 Red bell pepper julienne
  • 1 Carrot julienned
  • 1 Cucumber julienned
  • 1 C bean sprouts provided they look fresh
  • 4 Basil leaves
  • 2 Heads of little gem or Boston lettuce
  • 1 C chopped peanuts

Drizzle oil in a pan over medium heat. Sauté diced chicken for about 5-6 minutes or browned. If you want the vegetables cooked then add to the chicken and cook an additional 2-3 minutes or until tender but firm. If you want your vegetables raw for this wrap then just add to the lettuce. Add a sauce to the wrap and some chopped peanuts and enjoy!
