White flour can be stored for up to a year at room temperature.  Keep it in an airtight container to prevent the flour from becoming susceptible to flour beetles and other kitchen pests.  For long term storage, white flour will keep indefinitely in the freezer or refrigerator.  However, whole wheat flour can become stale and rancid because of oils in the germ.  Whole wheat flour will last for three months at room temperature, six months in the refrigerator and a year in the freezer.  So store it in the freezer if you’re not planning on using it quickly.  Also keep whole wheat flour in an air tight container.  If you do store your flour in the freezer take it out at least an hour before use.  It is best used at room temperature..
