Three Flavors of Garlic
Depending upon how the garlic is used it can have different flavors and aromas.
Raw garlic has a pungent aroma and a slightly spicy flavor. It is bested used in vinaigrettes, pestos or marinades where the flavor diluted with all the other flavors.
Slowly cooked garlic will develop and intense sweetness very much like caramelized onions.
Rapidly cooked garlic loses its spicy edge but retains an oniony aroma. If you let it get too brown it will become bitter.
