How to choose Asparagus!

Asparagus is a vegetable that comes in three distinct colors bright green the most common, white because it never sees the light, and purple which is less common. However what they do have in common they all should be firm, crisp, and the tips should be fully closed. You can tell if the asparagus is old by looking at the budding tips. If they are loose, or open they are they are old and will be more fibrous and less flavorful. People often ask if the thickness of the spears. The thinner the spear the more intense the flavor and the thicker the spear the more tender. Asparagus has a lot of water content so the best way to cook them is grilling, broiling, pan searing or stir-frying. To peal or not to peal and where to snap the asparagus. The jury is out its all a matter of preference. I sometimes peel my asparagus it depends upon what it looks like however, I cut the asparagus ends off with a knife I do not snap. For me the bottoms of the asparagus tend to be more fibrous and a bit bitter.
