Stetson Chopped Salad Recipe

Ingredients

  • 1 c. cooked pearl couscous
  • 1⁄2 c. diced Roma tomatoes
  • 1⁄2 c. roasted sweet corn (take the kernels off the cob and place in a 275 F oven until they have dried out some.
  • 1 c. chopped arugula
  • 2 oz. smoked salmon, diced (could substitute chicken if you don’t like smoked salmon)
  • 1⁄2 c. Asiago cheese
  • 1⁄4 c. dried cranberries
  • 1⁄4 c. toasted pepitas (pumpkin seeds)

Dressing:

  • 1⁄4 c. basil pesto
  • 1⁄2 c. mayo
  • 1 shallot
  • 1⁄2 c. buttermilk
  • juice of one lemon
  • salt & pepper to taste

Directions:

Arrange ingredients in separate rows on a large platter. Toss salad at the table, with the dressing. To make the dressing, place all ingredients in a blender and blend. Will keep in fridge for up to a week.
