Stetson Chopped Salad Recipe
Ingredients
- 1 c. cooked pearl couscous
- 1⁄2 c. diced Roma tomatoes
- 1⁄2 c. roasted sweet corn (take the kernels off the cob and place in a 275 F oven until they have dried out some.
- 1 c. chopped arugula
- 2 oz. smoked salmon, diced (could substitute chicken if you don’t like smoked salmon)
- 1⁄2 c. Asiago cheese
- 1⁄4 c. dried cranberries
- 1⁄4 c. toasted pepitas (pumpkin seeds)
Dressing:
- 1⁄4 c. basil pesto
- 1⁄2 c. mayo
- 1 shallot
- 1⁄2 c. buttermilk
- juice of one lemon
- salt & pepper to taste
Directions:
Arrange ingredients in separate rows on a large platter. Toss salad at the table, with the dressing. To make the dressing, place all ingredients in a blender and blend. Will keep in fridge for up to a week.
