The best way to store lemons.
Once citrus is harvested it doesn’t continue to ripen which means they retain their quality longer than other fruits. To keep lemons at their best store them chilled and in an air tight bag or container. If you keep them in the refrigerator in a zip lock bag they will last up to 4 weeks. The skin of the lemon is what keeps the lemon from drying out.
So if you zest a lemon and do not use the lemon right away wrap it tightly in plastic and store in the refrigerator. When freezing lemon zest or any citrus place the zest in a zip lock baggie and place in the freezer and it will last up to 3 weeks. The color will turn but it will still be find for baking and cooking.
